When I bought Vegan Cupcakes Take Over The World, I couldn’t wait to try it out. The pictures in the cookbook, and the accompanying blog, are beautiful. I don’t have too much of a sweet tooth, but they make me want to make cupcakes all the time.
A couple nights ago, I got some friends together and we made 3 different batches: vanilla, chocolate, and carrot cake.
Then we decorated them with things that we had (like mint, cherries, cranberries, raisins, nuts, coconut, and raspberry syrup).
Then we at them. They were delicious.

oh my! what a great idea, they look so great. what is the topping on the carrot ones?
We used a vegan cream cheese icing and topped them with shredded carrots and walnuts. Some have mint and almonds too. I’m pretty sure that’s all. We just used stuff we had at the house. It was fun! I’m ready to make some more!
