I really like soul food: cornbread, mashed potatoes, collard greens, red beans and rice, black eyed peas, casseroles, meatless loaf, etc. The small soul food places near my house in East Austin (Nubian Queen Lola’s Cajun Soul Food Kitchen, Gene’s Poboys), which I unfortunately can’t support, cook everything with bacon grease or top it with meat. Casa de Luz is a good alternative, but I can’t afford to go there as much as I’d like.
Yesterday I was thinking about the yummy soul food platter I plan to make for my future restaurant. I searched online for vegan loaf ideas and I found this site, which I think is amazing:
With this loaf generator, you can select a protein, carbohydrate, oil, liquid, binding ingredient, nuts and seeds, vegetables, herbs and seasonings, and salty seasoning. After you choose everything you want in your loaf, you can give it a name, hit submit, and voila–you have a customized vegan loaf recipe!
