Goulash

Sometimes really good things can be made when you think there is no food in your house. Some of my favorite meals have resulted from mixing all the leftover items in the fridge.

I like to call these creations “goulash.” While I didn’t have high hopes for this particular goulash, it ended up tasting delicious!

I warmed up some frozen corn, peas, and spinach and combined it with a cheesy tasting sauce I made with water, chick pea flour, nutritional yeast, and Earth Balance margarine. I threw everything in the blender, added some leftover mushroom tomato sauce, some leftover jalapeno salsa from my favorite taqueria, Rico’s Tamales, some paprika, coriander, garam masala, salt and pepper, and plopped this mixture on top of wheat noodles. Good stuff.
